Penne a la Vodka

Since Tina was the first to comment on my request for your input, I thought the first recipe I would post would be one that she gave me a few years ago.



Ingredients

Boneless, skinless chicken breast tenders, diced
1 small onion, diced
Minced garlic
1/2 jar of cherry peppers
1/2 jar of roasted red peppers
1 jar alfredo sauce
1/4 cup marinara or other red sauce
splash of vodka (optional)
Olive oil
1/2 box Penne pasta


Salt a pot of water for pasta and bring to a rolling boil. When boiling, place your pasta in the water and cook for 8-10 minutes.

Meanwhile, place olive oil in a medium size pan. While this is warming up, dice your chicken into bite-size pieces. Cook the chicken until done.

Add the onion, garlic and peppers. Let this cook with the chicken until the onions are transparent.

When the onion mixture is cooked through, add the jar of alfredo and red sauce. Mix this well with the onion mixture and heat through. Once heated through, add the penne pasta that has been cooked and the water drained off.

Add the vodka to the mixture at this point, if you are adding it. Otherwise, once all of the ingredients are warmed, pour the mixture into a pasta bowl. Garnish with freshly grated cheese (I added some grana padano that I received as a part of a gift basket at Christmas and it was to die for!!!)
