Some nights, you just can't cook everything from scratch. There is not enough time in every day to be able to do that.
For those nights, I use this recipe....
RAVIOLI FLORENTINE
1 package of ravioli from the refrigerator section
(My personal favorite is a sausage and beef one - but can't find that in too many grocery stores)
1 jar of Alfredo Sauce
1 package of frozen chopped spinach
1 small jar diced pimentos
Cook the spinach according to the directions on the package. Drain it completely when it is finished cooking.
Cook the ravioli in another pot according to the directions. Drain it well after it is finished cooking.
Meanwhile, in a saute pan, warm the alfredo and pimentos. After the spinach is cooked and drained, add it to the sauce. Allow to warm through. When the ravioli finish cooking and are drained, add to the saute pan.
After everything has heated through, serve immediately! Makes great leftovers too!
(Depending on how many you are serving, you can stretch the alfredo sauce out by adding Parmesan cheese, butter and heavy cream as the sauce heats. Add the heavy cream in small increments. If you want a thinner sauce, use milk instead of cream.)
