RECIPE FOR PORK TACOS

Some of you may know that I am slightly obsessed with pork tacos right now. Everytime there is one little piece of pork left over, the first thing I think of is making tacos. So here is how I am making them right now....

-Left over pork (tenderloin, shoulder, butt, whatever you have will work)
-Ground cumin
-Onion Powder
-Garlic Salt
-1 lime - cut into 8th's
-cilantro - chopped
-onion (or green onion) diced
-salsa verde

Chop up the pork. Put some cumin, garlic salt and onion powder on the chopped meat with a little water to coat everything. Just do the spices to taste. Some people are not huge fans of cumin, so start out light and then add more if need be.

Heat up the newly spiced meat. I heat it up in the microwave for lunch, or in a medium pan if making leftovers for dinner.

When the meat is warmed, place in a warm flour shell. Add chopped cilantro, fresh squeezed lime juice, fresh diced onion (or green onion) and salsa verde (tomatilla salsa). Wrap it up and enjoy!

If I don't have cilantro or lime around, I don't worry too much about it. It is good without these two!

These make great leftovers for lunch or a completely different meal for dinner.
