Mexican Cornbread

Well, since I decided to name this blog Real Mexican Cornbread (Mexican Cornbread was not available), after one of my favorite dishes, I decided that as the first post, maybe I should share the recipe for Mexican Cornbread that I love so much. It is super easy and tastes AWESOME (except to my husband that is not a super fan)!!!

MEXICAN CORNBREAD

1 pound groundbeef
1 box jiffy cornbread mix
1 medium onion, diced
1.5 - 2 cups shredded cheddar cheese
2-3 medium jalapenos, diced
1 can whole kernal corn, drained

This is super simple and quick!

Brown the hamburger meat and drain the grease from it. Mix the cornbread mix as directed on the package. Add in the hamburger meat, onion, cheese, corn and jalapenos. Depending on the consistency, you may have to add a tad more milk.

Place the mixed batter in a greased cast iron skillet and bake at 400 degrees until golden brown.

Let it stand for about 5 minutes before serving. Serve with pickled jalapenos and/or sour cream.
